Should employers mandate Covid-19 vaccinations?

Mandate may be a bit strong here. I'd go with a highly recommend and understand that we have to provide testing in the absence of the vaccine to ensure the safest environment possible.

Vaccination privacy and access issues must be addressed, but the health, safety and productivity of an office environment will mandate all staff and contractors on premises be vaccinated. Employees who choose not to be vaccinated will need to coordinate with their teams on extending a remote work arrangement, as with many staff who will choose to consistently work from home for other valid reasons.

Mandating isn't the best approach as it can create some bigger issues, especially in those countries where employment law may make it difficult (or illegal). A better approach might be to set a policy that says employees can't work in the office after x date if they haven't been vaccinated.

Mandates are done by governments not by corporations or mom and pop shops.
